I think I'm going to post pictures of all the meals I cook from now on. This one turned out delicious. It made 6 servings total, so I have lunches and dinners for the rest of the week!

Chicken Breast with black pepper, fried in pan with olive oil
Green Bean Casserole (Green Beans, Cream of Chicken soup, Fried Onions)
Whole Wheat Spaghetti


I'm also putting myself on a serious exercise schedule: Wake up before 7 AM every day and play at least 30 minutes of DDR! Also, weight lifting at least 2x a week once I buy some weights and a bench.

Time to get in shape for summer >_>

Chicken
1. cover raw chicken in pepper or seasonings
2. heat 1 Tbsp olive oil in frying pan
3. Add chicken, cook for 10 minutes on each side or until done. It's very important to not move them around after first putting them on the pan, otherwise you won't get a good sear and all the yummy juice won't stay in the chicken

Casserole
1. 2 cans cut green beans, 1 can Cream of Chicken soup (you're supposed to use Cream of Mushroom but I didn't have any), 1 cup fried onions (you can buy these in the supermarket), seasonings (red pepper flakes)
2. mix all ingredients together except fried onions, add to small baking dish
3. cover with onions, then wrap a piece of foil over top of dish
4. bake in oven at 450 degrees for 10 minutes

pasta
1. cook it! lol

That's a really great idea Fara.

First of all you have self-imposed portion control, this is KEY... as healthy as all of that is it wouldn't mean shit if you ate all 3 of those at once.

Second, it is a well-balanced meal with lean protein, complex carbs, and veggies with a bit of fat to make them taste good!

Good job!

Want a really good recipie for a potato leek soup that's amazing? (Soup rules because you make a ton and refrigerate/freeze it and eat whevever)

ok! it's a really easy recipie :)

5 shallots
6 cloves of garlic
3 leeks
4-5 celery stalks
6-8 potatos (preferable yukon gold), skinned and cut into ~1/2 inch cubes
48 oz. low sodium chicken stock
olive oil
butter
salt
pepper (I like white pepper so it doesn't show up in the soup)

:mince the garlic and shallots
:cut celery stalks into small pieces
:remove the green part and very bottom of the leeks, slice into long, thin strips
:in soup pot, melt ~2 tbs olive oil and ~2tbs butter
:add all the ingredients except the potatos, stir to coat with the butter/oil mix
:allow to cook on very low heat for 45 minutes
:add the chicken stock and the potatos
:allow to cook on med low heat until potatos are soft
:remove half of the soup and blend it (blender or food processor)
:add the blended soup back to the remaining soup
:stir and season with salt and pepper

it is so good!
