Potato Pancakes! (Cooking +0.1)
FFXI is boring so I doubt I'll be posting much about it in this journal anymore. I tried to exp PUP last night but it failed horribly (1 NIN online, 1 RDM online, better than normal). Ended up being NIN WAR DRG PUP MNK RDM on Colibri at 63-64 but the WAR pulled a Treant and wiped the PT and then people disbanded. lolPUP.

At least I figured out how to beat the ENM60 (lost 2x, then won but no drops). 2000 exp every Sunday, I don't think I can lose using the full ValorEdge + Hi-Pots, even if he summons 4x Valoredge, I can survive and he'll usually be pretty close to dead by then.

Anyway, on to food!

So I looked in the fridge and saw a bag of potatoes that has been there for like 2 weeks. I thought what I could make and had a sudden craving for hash browns. So I googled some recipes for potato pancakes and invented my own :)

Ingredients:
1.5 lb Potatoes, shredded (skin and all, no need to peel them)
1 Large Onion, shredded
1 Tbsp Milk (I used wayyy too much)
1 Egg
2-4 Tbsp Flour
1 Tbsp Baking Powder
Salt and Pepper
Parsley
Any other seasonings you want to add

Steps:
1. Shred potatoes and onions, mix together by hand and sit in strainer in sink
2. Combine dry ingredients (flour, salt, pepper, parsley, spices)
3. Pour milk + egg over potatoes + onions
4. Add dry ingredients to potato mixture and mix
5. Heat Oil in frying pan over medium heat
6. Add potatoes to oil roughly 1Tbsp drops, and flatten with back end of spoon
7. Flip when brown on bottom

Not the healthiest thing in the world, but very yummy! I only ate 4 of them since I don't want to go crazy, need to find something else to eat them with as a real meal. Or maybe I'll just eat them in the morning for my carbs. Next time I'll use sweet potatoes!

they look yummy.. I'm hungry and Polish to boot so that kind of thing is sooooo comfort food to me.

That's German food, I make them all the time. They're really nice with apple sauce.

Probably European food then...we do that a lot in France too =) Never tried with apple sauce though.

I really wish I had a properly stocked kitchen. Everyone in my house buys crap food and if I bought real food to make stuff everyone else would use it before me. >.>;

I can't wait to move. Once I do I'll be able to start eating much healthier than I do now. Not that I eat poorly now as it is... but I could do better.

lol same with my fmaily everyone eats everything xD and im leftover with nothing and then just practically not eating -.-

I used to read your journal for the interesting FFXI updates, but now I am almost more interested in your cooking/diet/excersise updates. I can relate many of the things you mention to my real life, and some of them even inspired me. Keep up the updates, I want more recipies, more interesting excersise idea's (lol @ DDR), and all that good stuff.
